Recently, my friend visited her home state Louisiana-specifically New Orleans. (Waving to Katrina.) If you've ever been to New Orleans, you know that some must-haves there are Cafe Du Monde beignets with their Cafe Au Lait!
We usually try to make it to NOLA once every two years. In the aftermath of Harvey, we are still recovering so we will probably not be visiting there anytime soon.
That won't stop me from enjoying beignets!
Our local grocery store and some Walmarts carry THE Cafe Du Monde beignet mix. It is so easy to make at home!
All you need is the mix, some warm water, flour for dusting, a rolling pin, oil for frying and plenty of powdered sugar. You don't even need much time.

I cut them on a diagonal for a diamond pattern, but that is not necessary.

Now, it is possible to have beignets without Cafe Au Lait, but that is also easy to make at home. There is no need to deprive yourself!
You just need to heat a little milk to just under scalding.
My preference is whole milk, but I'm sure any kind of milk would work fine including a non dairy milk such as almond or cashew milk. I prefer to use my own locally roasted coffee, but you can also buy the Cafe du Monde brand of coffee.
Then, I just poured both vessels of milk and coffee at the same time. I just eyeballed it. Check out my husband's superior camera skills.
I stirred in a touch of turbinado sugar and enjoyed my breakfast! While drinking my DIY cafe au lait, I often wonder why I Don't make it more often.
