Today, I used to tip that I originally saw on A Taste of Home Facebook page. I used my KitchenAid mixer to shred chicken!
We had flautas for dinner tonight. Flautas are cooked shredded chicken rolled in corn tortillas and fried to a crisp. They look like flutes which in Spanish means "flautas."
I had some frozen chicken and leftover mini corn tortillas and decided to make them.
I defrosted / cooked the chicken in the instapot. When it was done, I took it out to start cutting on a cutting board into little pieces. I didn't want to stand there with a knife going back and forth, with chicken falling all over the place. I suddenly remembered the tip that I saw.
This was the first time I had ever tried it and I loved the results!
Our complete dinner consisted of flautas, refried beans, a small salad, homemade queso and a yummy guacamole that my daughter whipped up at the last minute. No rice to reduce carbs. I think flautas qualify for Taco Tuesday.
I will definitely use the mixer for shredding chicken again. I'm sure it will work just as well for other cooked meats.
