Today is another national day that I can fully support... National Dessert Day! Today is October 14th, and I am really surprised that I have yet to have at least one caramel apple this month. I had been looking for those caramel wrap discs usually in the produce section for couple of weeks, but haven't been able to find them. I could make my own caramel, but it's really tricky when candy thermometers get involved.
I came across this caramel apple recipe and decided to give it a go. It seemed easy enough and yes it turned out to be quite easy. I highly recommend it!

The wooden sticks were bought at the dollar store.
The recipe called for 4 bags of soft caramels and recommended Werther's soft caramels. Luckily, they had them at Joe V's for a $1.67 each at my store.
We plan on enjoying them tonight, so I got an early start on them. It actually didn't take very long at all.
The hardest and longest part of the process was unwrapping all of the caramels. Luckily for me, I had a helper who particularly loves sweets. I paid him by letting him have one caramel for himself.
It took less than 3 minutes to warm up the caramel and heavy cream. It looked a little dicey at first but quickly smooth out.
I added a tiny bit of pink Himalayan sea salt just to be trendy.
Within minutes we were dipping and sprinkling.
They are now in the refrigerator and await the golden hour after dinner to be eaten as we watch the Astros.
There was a little bit of caramel left over and I may or may not have put it in a jar to save for coffee drinks that I will be making when the cool weather finally hits Houston this week.
I am also currently licking the spatula I used to stir the caramel and I can testify that it is very, very tasty!
